Grandma's Corn Pudding

A yummy and simple addition to your Thanksgiving fare that kids and grownups alike will enjoy.

Cook time: 1 hour
Servings: 8 servings

Ingredients

  • 5 eggs
  • 1/3 cup butter, melted
  • 1/4 cup white sugar
  • 1/2 cup milk
  • 4 tablespoons cornstarch
  • 1 can whole kernel corn
  • 2 (14.75 ounce) cans cream-style corn

Directions
  1. Preheat oven to 400 Degrees F (200 degrees C).
  2. Grease a 2 quart casserole dish.
  3. In a large bowl, lightly beat eggs.
  4. Add melted butter, sugar, and milk.
  5. Whisk in cornstarch.
  6. Stir in corn and creamed corn. Blend well.
  7. Pour mixture into prepared casserole dish.
  8. Bake for 1 hour.
T's Sweet Potato Fries

Tired of the same old baked sweet potatoes or that casserole with marshmallows on top? Here's an interesting change up for the groaning board.

Servings: 4 Servings
Calories per serving: 174 calories
Prep time: 20 minutes
Cook time: 35 minutes
Ready In: 55 minutes

Ingredients
  • 4 sweet potatoes, cut into large French fries
  • 1 tablespoon water
  • 2 teaspoons Italian seasoning
  • 1/2 teaspoon lemon pepper
  • 1 pinch salt and pepper to taste
  • 2 tablespoons olive oil

Directions
  1. Preheat the oven to 400 degrees F (200 degrees C).
  2. Place the cut sweet potatoes into a microwave-safe dish with the water.
  3. Cook on in the microwave for 5 minutes on full power.
  4. Drain off liquid, and toss with Italian seasoning, lemon pepper, salt, pepper, and olive oil.
  5. Arrange fries on a baking sheet in a single layer.
  6. Bake for 30 minutes, turning once, or until fries are crispy on the outside.

Footnotes
If you prefer a sweeter variety, substitute pumpkin spice seasoning along with 1/2 teaspoon of brown sugar.

Tip
Aluminum foil can be used to keep food moist, cook it evenly, and make clean-up easier.
