A Thanksgiving Change Up

It's almost Thanksgiving and you've put the menu together, but wouldn't you like one more thing that's a bit different this year? Here from shoprite.com is that one extra bit of Fall flavor to grace your table and awe your family and guests.

Caramelized Corn Sauté

Prep time: 20 min Cook time: 10 min Serves: 4

Ingredients

2 Tbs olive oil
2 medium red bell peppers, seeded and diced
1 medium zucchini, diced
1/2 yellow onion, chopped
1 Tbs fresh lemon juice
1 cup frozen corn, thawed*
2 Tbs chopped fresh basil

Directions

1. In a large skillet heat oil over medium-high heat.
2. Add red bell pepper, plus zucchini and onion; saute 5 to 7 minutes or until crisp-tender.
3. Add lemon juice and corn.
4. Cook, stirring occasionally, 5 to 7 minutes.
5. Season with salt and pepper to taste. Sprinkle with basil, and serve.


* Or you can use 1 cup fresh corn kernels cut from the cobs of 2 ears of corn.
