Hearty Lasagna Roll-Ups

It's still winter in North America and this crowd pleasing simple recipe from is sure to warm the hearts (and stomachs) of the entire family. Hearty Lasagne Roll-ups can be made with leftovers or starting from scratch, but are quick and easy for a cold weather recipe. You can serve these with a fresh green salad with a light oil and vinegar dressing and crusty bread.

Prep time: About 25 minutes Cook time: 30 minutes Servings: 8 generous


30 ounces Bolognese sauce (tomato sauce with meat)
1 package lasagna noodles (at least 15 or more whole strips)
16 ounces ricotta cheese
1 cup frozen spinach, thawed and strained
2 cups shredded mozzarella cheese
1 1/2 cups grated parmesan cheese
1/2 cup chopped fresh parsley
Garlic powder, to taste
Chopped fresh basil to garnish


Preheat oven to 375 F

Cook noodles in a large, generously salted pot of water until al dente (don't cook through, they'll finish in the oven)
In a large bowl combine ricotta, spinach, 1 cup each of he mozzarella and parmesan cheeses and garlic powder to taste.
Using a 9"x13" oven safe baking dish, spread a small amount of the Bolognese sauce in the bottom so the roll-ups won't stick during cooking.
Lay a lasagna noodle on a flat surface then spread a thin layer of the cheese mixture over it and top with a small amount of Bolognese sauce.
Roll the filled lasagna noodle up and place it in the baking dish.
Continue until all the noodles are filled and rolled making sure they are snug up against each other.
Spread the remaining sauce over the roll-ups making sure they are all covered.
Top with the remaining parmesan cheese then sprinkle the mozarella cheeze evenly on top.
Bake for 30 minutes until the cheese melts and is slightly browned.
Sprinkle with chopped basil and serve.
