Sweet Potato Pie Times Two

A fond memory of anyone traveling in the southern part of the United States is of the many different types of pie that were available.  At this time of the year, though, one stands out from all the rest and would be awesome served hot, cold, with ice cream on the side or any other calorie-laden topping one can think of. 
Here are two versions of a yummy dessert,
Sweet Potato Pie
1/4 c. butter
3/4 c. sugar
5 oz. evaporated milk (NOT condensed)
1/4 tsp. salt
2 eggs, beaten
1/2 tsp. cinnamon
2 tbsp. cornstarch
2 (16 oz.) cans yams, drained and mashed
1 tsp. vanilla
1 unbaked 9 inch pie shell

Preheat oven to 400 degrees. Cream butter and sugar together. Add eggs and stir. Add sweet potatoes (yams) and mix well. Stir in milk, vanilla, and salt and cinnamon, making sure all ingredients are thoroughly mixed. Pour into pie shell and bake 15 minutes at 400 degrees. Lower heat to 350 degrees. Cook until knife comes out clean, 20-30 minutes.
Or, if you prefer:
1 (40 ounce) can sweet potatoes, drained
3 eggs
1/2 cup butter
1 teaspoon vanilla
1 teaspoon nutmeg
1 teaspoon cinnamon
1 (14 ounce) can sweetened condensed milk
1/2 cup brown sugar
1/2 cup granulated sugar
2 deep dish pie crusts

Preheat oven to 350 degrees.
Mix all ingredients together in a large mixing bowl until batter is smooth and not grainy.
Pour batter into 2 deep dish pie crusts.  Bake in oven for 60 m
