Irish Soda Bread Cookies .

Irish soda bread is a tradition for St. Patrick's Day and any other day you might enjoy it.  Here, from kitchme.com, is a unique twist on the old favorite that will keep family and guests happy!

 Ingredients
  • 2 cup all-purpose flour
  • 3⁄4 cup white sugar
  • 1⁄2 tsp baking soda
  • 1⁄4 tsp salt
  • 1 tsp caraway seeds
  • 1⁄2 cup butter
  • 1⁄2 cup dried currant
  • 1 egg, beaten
  • 1⁄4 cup buttermilk
 
Directions
  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Combine flour, sugar, baking soda, salt, and caraway seeds in a mixing bowl.
  3. With a pastry blender, cut in butter until the mixture resembles coarse meal.
  4. Stir in currants and egg.
  5. Pour in buttermilk and mix with a fork to make a soft dough. Add a little more buttermilk, if necessary.
  6. Drop by the tablespoonful onto ungreased cookie sheets.
  7. To make shapes, form dough into a ball and knead lightly 5 or 6 times on a floured surface.
  8. Roll out dough to 1/4 inch thick and cut into squares and triangles or use a cookie cutter to make rounds.
  9. Bake for 12 to 14 minutes or until slightly browned.
