As summer ramps up and the heat kicks in, something simple and cool is what you want for lunch or dinner.  This Thai inspired recipe from shoprite.com is quick and easy and super healthy!

Thai my Zoodle

Serves: 4 to 6 people, Prep time:  15 minutes (45 minutes if cooked shrimp is frozen)

Ingredients

16 oz zucchini noodles
16 oz 31/40 size cooked shrimp
8 oz can whole kernel corn, drained
4 oz baby kale
2 oz roasted cashews, chopped
2 scallions, thinly sliced
1 tbsp black & white sesame seeds
8 oz sesame ginger dressing
1 tsp fresh cilantro, chopped
1 lime, zest & juice

Preparation

Remove tails, devein shrimp and place in a stainless steel bowl
To the shrimp add sesame dressing, zucchini noodles, corn, baby kale, lime zest and juice, cilantro, half the scallions, half the cashews and the sesame seeds.
Toss evenly, place in serving bowls and top with remaining scallions and cashews
