Easy, Tasty Baked Chicken.

Don't just toss out that grocery store flyer without looking inside for seasonal recipes that are sure to please.  This easy recipe from the seabrafoods.com flyer takes baked chicken up a notch and can be served for dinner or to satisfy appetites at an outdoor event.  When the ingredients say "to taste" use your judgement and start with about 1/8 TSP.  A single bay leaf is usually enough and can be broken into two or three pieces (don't go much smaller or it'll be hard to fish out before serving).  ENJOY!!
 
Antonio's Baked Chicken
 
Ingredients
 
  • 3 1/3 pounds chicken pieces (1.5 kg)
  • Juice of one lemon
  • 1 whole lemon, sliced
  • Pepper (to taste)
  • Oregano (to taste
  • Nutmeg (to taste)
  • Thyme (to taste)
  • 5 cloves garlic, peeled and crushed
  • 1/2 cup plus 2 TBSP olive oil (150 ml)
  • Bay leaf (to taste)
  • Salt (to taste)
 

Directions
 
Preheat oven to 350 F/180 C
 
  1. Put chicken in a baking dish in one layer
 
  1. Mix spices and oil and pour evenly over chicken.
 
  1. Cover and let marinate for at least one hour.
 
  1. Drain off extra liquid and save for basting.
 
  1. Place in oven and bake approximately 1 hour and 10 minutes until golden.
 
  1. Serve with fluffy rice and a crisp salad for dinner or break up the chicken into smaller pieces and put out the corn chips for a backyard picnic.
